This shepherd’s pie is quick and simple to make, and pairs well with a side salad. Serves 4-6.
Ingredients
1 pound ground beef
1/2 cup minced dry onion or chopped onion
1 1/2 cup of your favorite vegetables
2 cups mashed potatoes
Shredded cheese (optional)
Instructions
- Brown beef and onion, pouring off any excess grease
- Place beef mixture in casserole dish and add vegetables
- Cover with mashed potatoes and top with shredded cheese
- Heat in microwave until bubbly
