The Carolina LTVers held our fall rally this year in the shadow of the Table Rock and Caesar’s Head mountain formations in the Blue Ridge Mountains. The fall rally timing was moved up to early October to lessen the chance of the cold and wet temperatures we experienced during the 2018 fall rally. Well, we sure didn’t have to worry about the cold. With temperatures in the mid 90s, it was nice to sit on the porch and rock to create your own breeze.
Thirteen LTV coaches attended the rally, including 7 members attending their first rally. Unity, Flex, and Serenity models were all represented, including a new 2020 model. We kicked off the rally with a pot luck appetizer meal, followed by a session to review the agenda and listen to an overview of the leader’s trip to the Winkler rally. Since it was too hot for s’mores, Laura provided a yummy caramel apple dump cake with ice cream for dessert. (See recipe at the bottom of this post!)
Thursday morning we met for a continental breakfast and discussed ideas for the day. Several people explored the campground, went for rides in the mountains, or visited the state parks close by. Before dinner, we had a wine tasting by Victoria Valley Vineyards, a local vineyard that grows all of their varietals locally in the mountains. Then we all enjoyed a lasagna dinner prepared by Naked Pasta, an artisan pasta maker in Greenville.
Friday morning we had breakfast, followed by a session to share RV tips and questions. We had a lot to discuss and the session lasted over 2 hours. A lot of valuable information was shared that morning! We all reconvened later for a dinner of hamburgers, hot dogs, potato salad, and cookies. We shared ideas for future rally locations and activities and took a group picture in the shadow of Caesar’s Head.
Our next rally will be held in Huntington Beach, SC, from April 22 – 25, 2020.
Caramel Apple Dump Cake
Ingredients:
6 cups chopped apples
1 cup caramel ice cream topping
1 teaspoon cinnamon
2 cups walnuts
1 yellow cake mix
½ cup melted butter
Instructions:
- Preheat oven to 350 degrees.
- Spray a 9″ x 13″ pan with nonstick spray, and pour apples into the pan.
- Drizzle with caramel topping and sprinkle over with cinnamon.
- Spoon nuts over evenly.
- Sprinkle cake mix over apple mixture until completely covered.
- Drizzle melted butter on top of mixture, adding more butter if needed to cover dry mix.
- Bake for 45 minutes.
- Serve with vanilla ice cream.
