This shepherd’s pie is quick and simple to make, and pairs well with a side salad. Serves 4-6.


1 pound ground beef

1/2 cup minced dry onion or chopped onion

1 1/2 cup of your favorite vegetables

2 cups mashed potatoes

Shredded cheese (optional)


  1. Brown beef and onion, pouring off any excess grease
  2. Place beef mixture in casserole dish and add vegetables
  3. Cover with mashed potatoes and top with shredded cheese
  4. Heat in microwave until bubbly
